4th Of July American Flag Popsicles
plain yogurt / goats milk yogurt
about 1 cup blueberries
about 1-1/2 cups strawberries
blender or a whisk
Start by blending your ingredients. I used an immersion blender and it worked great, but you can use a small blender or even a whisk if you don’t mind mixing by hand. The trick to making perfectly striped popsicles is thinning out your ingredients so that they are a little liquidy before you add them to the popsicle mold.
Grab three cups or bowls and mix each ingredient in its own container. For the blue stripe, blend a handful of blueberries until mushy, adding a small amount of water if needed. Add sugar to taste, and you can also add a little blue food coloring if your blueberries are too purple. For the red stripes, blend a handful of strawberries until mushy, adding a small amount of water if needed. Again, add sugar to taste if necessary. For the white stripes, blend a scoop of yogurt with a small amount of water, and add sugar if needed.
Now it’s time to assemble the popsicles! It takes a little while to assemble these popsicles, because each layer has to completely freeze before you can add the next layer. Store any mixtures you’re not using in the fridge to keep them cold while you work.
For the blue stripe, pour about an inch of the blue mixture into the bottom of each popsicle mold. I find it easiest to use a turkey baster for this part; that way you can get the blueberry mixture down into the bottom of the molds without accidentally dripping any on the sides! If you do drip a bit, just wipe it up with a paper towel so it doesn’t freeze there and mess up your stripes.
Then cover the popsicle molds and place them in the freezer until the blueberry mixture is frozen. (You always want to cover your popsicles when freezing them. My molds came with a lid, but you can also use cling wrap or wax paper. This will keep them from soaking up the tastes and scents floating around in the air in your freezer while they freeze!)
Once the blue layer is frozen, pull the molds out of the freezer, and add a thin stripe of the white yogurt using the turkey baster. Again, wipe any drips off of the side. Add popsicle sticks, pressing them slightly into the blue layer, cover the molds, and freeze until the white layer is frozen.
Pull the molds out of the freezer again and add a thin stripe of the red mixture, wipe away any drips, cover, and freeze. Continue alternating white and red stripes until the molds are completely full.
Once the entire popsicle is frozen, you’re done! Run the molds under room temperature water to help loosen the popsicles, slide them out of the molds, and enjoy!
